Beef Pepper Rice

A copy cat recipe of the famous Pepper Lunch. Here's a close attempt of their signature Beef Pepper Rice meal. Usually served on a sizzling cast-iron plate, this version's apartment friendly. We wouldn't want to trigger those smoke alarms!

Ingredients

  • 800g beef thinly sliced
  • 1 cup of whole kernel corn, or an alternative, mixed veggies (corn, carrots, peas)
  • Half cup of soy sauce
  • half cup of Mirin
  • 2 tbsp. of ground black pepper
  • 2-3 garlic cloves, minced
  • 1 whole onion, thinly sliced
  • 1 stalk of scallions, thinly sliced
  • 2 cups of cooked rice
  • 3 tbsp. of cooking oil
  • Salt to taste. The soy sauce should be salty enough.

Instructions

  1. Place your thinly sliced beef in a air tight ziplock bag and put in the soy sauce, mirin, minced garlic and black pepper. Notice I didn't add salt at this part, because soy sauce is salty enough.
    Give the bag a good message to ensure the every piece of beef gets coated in flavor.
    Place in the fridge for 1 hour up to overnight.

  2. When you're ready to cook, set a wide pan on medium-high heat. Once its ripping hot, add in your cooking oil of choice, and swirl it around the pan, making sure to coat every surface.

  3. Add in your beef slices and spread it evenly across the pan. Add the onions on top of the beef, and let cook for a minute or two before flipping it around.

  4. Once your beef slices are cooked, and the onions have turned translucent, take it off the pan and set aside on a plate.

  5. If there is excess oil, you can take this out. Just make sure to keep a tablespoon of oil in the pan. Turn the heat down to medium and sauté your mixed vegetables for 2-3 minutes. Once the vegetables are cooked through, take it off the pan and set aside on a plate.

  6. Now typically this is served on a sizzling hot cast-iron plate. I don't have that so I'm gonna reuse the pan.
    For a little bit of presentation, Turn the heat to high, add in the beef slices and place it around the pan, leaving an exposed area in the center of the pan.

  7. Next, grab your cooked rice and put it in the center of the pan, form it in a mound if you can. The high heat will toast the bottom of the rice adding the flavor from the marinade. Yay for texture!

  8. Lastly, grab your mixed veggies and place it around the pan between the rice and the beef slices.

  9. Turn off the heat and garnish with thinly sliced scallions, crispy fried garlic and some more pepper.
