Easy and Cheesy Chicken Quesadillas

Quickly becoming my favorite thing to serve to friends, a simple cheese quesadilla will do, but let's take it a few steps further and become every one's favorite person to hang out with.

Ingredients

  • 2 Flour tortillas, you can definitely use any kind of tortilla you like
  • 1 to 2 cups of Monterey Jack cheese or if you're cheap like me, any melt-y cheese product will do.
  • 4 boneless and skinless chicken thigh fillets
  • 1 medium-sized green bell pepper, diced
  • 1 medium-sized red bell pepper, diced
  • 1 medium-sized white onion, chopped

For a simple chicken marinade

  • 2-3 tbsp of olive oil
  • Cumin
  • Salt
  • Freshly ground black pepper
  • Paprika

Instructions

  1. Mix together Cumin, Paprika, Salt, Freshly ground black pepper, and the olive oil until thoroughly combined.
  2. Add all that with your chicken in a food-safe storage bag, giving it a massage so that every piece of the chicken is coated with flavor.
  3. Allow it to marinate in the fridge for about 30 minutes.
  4. When you're ready to cook, pre-heat a frying pan on medium-high heat until it starts to simmer. No need to add oil as you already put some in the marinade.
  5. When the pan is hot, carefully place your chicken and let cook for 3-4 minutes on each side or until a nice char forms, before flipping to the other side. When the internal temperature reaches 165°F or 75°C, take it off the pan and let it cool completely on the side. 
  6. When the chicken is cool enough to handle, slice into bite-sized pieces.
  7.  In the same pan, add in a little more oil if desired for now you will sautee the onions and bell peppers.
    When the onions have become translucent and the bell peppers start to soften (but not mushy), add in your chopped chicken, and mix until everyone has gotten to know each other.

    Now the hard part is done, it's assembly time!
  8.  Cover half of a large tortilla with the chicken and bell pepper mix; Covering the whole affair with the cheese of your choice and fold the other half of the tortilla over it.
  9. On a large pan, add 2-3 tablespoons of oil and place the halved tortilla and let cook for 2 -3 minutes or until a crispy light-brown crust forms. Carefully flipping over and cooking the other side, at which point the cheese should have already melted.
  10. Nothing left to serve on  a plate with salsa, guacamole, sour cream, and enjoy!
