Enjoyed mainly as a street food in the Philippines, you can also see this being served in parties next to the pancit and lumpia. Instead of being prepared with a dry-rub, the pork is marinated in a variety of sauces that give its very distinct and Filipino flavor.

1. Place all your cut up pork shoulder in a large bowl and mix in all ingredients thoroughly, and let marinate anywhere between 2 to 3 hours.
For best results, cover bowl with a plastic wrap and marinate overnight.
2. When preparing to grill, pre-soak your wooden barbecue sticks to prior to grilling to prevent them from burning.
3. Skewer 3 - 4 pieces of pork on each stick, making them as compact as possible.
Do not throw away the marinade as you will use that for basting in the next step.
4. Grill time! Turn the grill on medium heat, and cook each piece thoroughly about 5 minutes each side. Brush on the marinade every time you flip them to get that reddish color.
5. Serve over hot rice and enjoy!
