How to make poutine at home

With just a few ingredients you can get from the grocery store, you can easily make one of Canada's favorite dish!

Ingredients

  • Pre-cut fries from the frozen section or 4 large russet potatoes, cut into fries
  • cheese curds, you can use fresh mozzarella which you can tear up, or any type of creamy and soft cheese
  • 2 cups of chicken stock
  • 2tbsp of all purpose flour
  • 2tbsp of unsalted
  • salt and pepper to taste
  • 2 tsp of soy sauce or Worcestershire sauce for additional taste and for a darker gravy color

Instructions

Fries

  1.  Whether you cut your own fries or bought 'em from the frozen section of your grocery store, you want to fill a medium-sized pot half way with neutral oil like Canola or vegetable. Heat that up to 350°F (176°C).
  2.  Once that is heated, put in your fries in small batches at a time. You don't want to overcrowd it and risk a grease fire. Fry for 5 minutes and set aside.
  3. Once all your fries are initially fried, turn the heat up to 375°F (190°C) and then fry your fries again in batches this time for 2-3 minutes or until they are golden brown.
  4. When everything has been refried, season everything with salt and pepper, toss so that every fry gets flavor and set aside

Gravy

    So this is best done between steps 2and 3 above to avoid soggy fries.

  1.  in a medium sauce pan on medium heat, add 2 tablsepoons of unsalted butter and let cook until its melted.
  2. Immediately add in 2 tablespoons of all purpose flour and mix thoroughly until the flour is cooked. You should have what looks like a paste made of butter and flour, a roux.
  3. Slowly add in your chicken stock, stirring constantly. Add this in small amounts at a time so that you won't have clumps of butter and flour in your gravy. Keep mixing until your reach your desired gravy consistency.
  4.  Add a few drops of Worcestershire sauce or soy sauce for color and a little saltiness
  5. Season to taste with salt and pepper and with any other herbs you like. I used dried thyme for this one.

Assembly

  1. On a serving plate, put in your crispy golden fries, topped with cheese curds, or torn pieces of mozzarella cheese, or any soft and creamy cheese product you can get from your grocery store. Slather everything with your gravy and enjoy!
