Ingredients
- 2 thick slices of white bread
- 2 eggs, scrambled
- 2tbsp of milk
- SPAM, sliced. Optionally you can use ham.
- Scallions, chopped for garnishing
- Japanese Mayo
- Sriracha
- 2tbsp butter for toasting
- salt and pepper to taste
- 2 slices American Cheese or any cheese you like.
Instructions
- First, You have to toast your two preferably thick cut slices of bread. You can do this on a toaster if you have one. If not, take some softened butter and spread on the two sides of each slice of bread. Preheat a wide pan on medium heat and toast your bread to your desired brown-ness.
Set that aside for now, preferably keeping it warm.
- In the same pan, cook as many SPAM slices you want to your preferred doneness. Usually takes 3-4 minutes on medium heat depending on how thick you cut them.
- Time to break some eggs. So in a bowl, crack 2 whole eggs, add 2 tbsp of milk. Whisk to combine.
- In the same pan you toasted your bread and cooked your SPAM, Turn the heat to medium-high and add 2 tbsp of unsalted butter and let it melt.
- Once the butter is bubbling, turn the heat down to medium and put in your eggs. Now the tricky part is making it fluffy: Consistently stir on the heat for 30 seconds, and then take it off the heat for another 30. Eventually curds will start to form as the eggs cook from the heat.Repeat this step until your reach a fluffy consistency.
- Remember to taste as you go along and adjust with salt and pepper.
Assembly
If you've kept your bread warm while you cooked the SPAM and eggs, then even better.
Spread some Japanese mayo on one side of each bread, place sliced cheese on each piece of bread, and then top that with your SPAM or ham slices.
Usually you'll need something to hold these two slices together to make an opening for the egg. But if you don't that's okay.
Simply top the SPAM or ham slices with your scrambled eggs and crown with the other slice of bread.
Garnish with scallions, spread with some more mayo or even sriracha and enjoy.
