Lemon-Pepper Chicken Banh Mi You Can Make at Home

This is an attempt at making a Banh Mi sandwich with the ingredients I had in my fridge. May not be as authentic but its close enough! Plus an added bonus of making your own pickled vegetables.

Ingredients

  • 2 Baguettes, 6 inches long, toasted to your liking.
  • 1 tbsp. (45g) of liver spread or liver pate
  • mayonnaise
  • 2 medium-sized boneless chicken thigh fillet
  • Lemon-pepper seasoning
  • 2-3 tbsp. cooking oil


Pickled vegetables 

  • 1 small carrot, julienned.
  • 1 half cucumber, sliced thinly into discs
  • 1 small onion, thinly sliced
  • 1 cup white vinegar
  • 1 cup water
  • 2 tbsp. white sugar
  • 1 tbsp. salt
  • 1 tbsp. whole black pepper corns

Instructions

Pickled Vegetables

  1. In a small pot, combine water, vinegar, sugar and salt. Set it to medium and let it come to a boil.

  2. While waiting for it to boil, cut your carrots into strips (julienned), cucumbers into thinly sliced discs, and thinly slice your onions.

  3. Put all those in a mason jar or a container that can handle the heat.

  4. Once your mixture comes to a boil, turn off the heat, and then pour it into the jar containing your mixed veggies.

  5. Let this cool to room temperature, and you'll have pickles!


Banh Mi

  1. Cover your boneless chicken thigh fillets with Lemon-pepper seasoning, making sure both sides are covered. Get it under the skin too, to maximize flavor.

  2. Get a wide enough pan and put on medium-high heat. Once it starts to smoke, add in your cooking oil, and then swirl it around the pan to coat every surface.

  3. Place your chicken thigh fillets skin-side down onto the pan, gently. and press down to sear the skin and get that crunch.

  4. Let cook for 5 minutes, before flipping and cooking for another 5-6 minutes.

  5. Once chicken is cooked, set aside to cool, and its up to you if you want to chop it in slices for easier bites or leave it as is. I chopped mine into slices.

  6. Next, you'll want to toast your baguette. Pre-heat a separate pan large enough for your baguette on medium heat.

  7. Spread softened butter all over the baguette and toast to your liking.


Assembly

  1. Grab your toasted bread, and spread an even layer of liver pate on both sides. You can also use mayonnaise here, or both if you feel like it.

  2. Next take your chicken thighs and place it evenly across the baguette.

  3. Top with your pickled vegetables, make sure to shake of the excess liquid first, to avoid the whole thing becoming soggy.

  4. Finally, garnish with cilantro ( I used parsley )
