Treat yourself to a cooling Korean Peach-Mango Bingsu on these hot summer days!
Ingredients
1 bag of shaved ice, alternatively, you can mix
1 large ripe mango, cut into cubes
1 cup canned peaches, cut into small cubes. Preserve the peach syrup from the can.
1.5 half cup of sweetened condensed milk
1 cup of evaporated milk
1/4 cup of sugar
vanilla ice cream
Instructions
If you can't get a hold of shaved ice, you can make it on your own! Simply mix the evaporated milk and sweetened condensed milk into a bowl and place it in your freezer.
Once frozen, grab a fork and scratch along the surface to make your ice shavings. Put it back in the freezer while you prepare the peach and mango jam.
In a small sauce pot placed over medium heat, Combine the peaches and mangoes along with 1/4 of sugar and the peach syrup from the can. To adjust the sweetness to your liking, add the sugar and the syrup slowly until it reaches your desired sweetness level.
Bring to a simmer and let cook for 3-5 minutes until it arrives to your desired consistency. Usually you want this to be like a jam. To thin it out, add a tablespoon of water to loosen it up.
Once cooked, remove from the heat and let it cool enough to handle.
Assembly
In a serving bowl, fill it with your sweetened ice shavings, top it with a scoop of vanilla ice cream, and then surround it with your peach-mango jam.
Drizzle with sweetened condensed milk and then serve!
