The Perfect Steak

There are two kinds of people: those who like their steaks medium rare, and those who are wrong. Credits to Joshua Weissman!

Ingredients

  • 1.5in - 2in Ribeye Steak
  • salt
  • pepper
  • a bunch of rosemary twigs
  • 2-3 large cloves of crushed garlic
  • 3 tbsp unsalted butter
  • Neutral and High smoke point oil like canola, safflower

Instructions 

  1. Heat up a cast-iron skillet with 2-3 tablespoons of oil on medium heat.
  2. While you wait for it to simmer, make sure your steak is at room temperature. Pat dry and then season generously with salt and freshly ground black pepper.
  3. Once the oil is hot, place the steak onto the pan and away from you. For a medium rare steak, you want to cook it at 2-3 minutes per side until the internal temperature registers at 135F.
  4. Toss in your crushed garlic, rosemary sprigs and butter. Place the steak, rosemary, and garlic at the top of the pan and tilt it towards you, letting the melted butter and the oils to drip down to the bottom.
  5. Using a spoon, you'll want to baste the steak with all these flavors over and over again while keeping an eye on that inner temperature.
  6. Once it reaches your desired doneness, take it off the pan and place it on a cutting board or a cooling rack and let cool for 8-10 minutes before cutting.
  7. Once cooled, you want to cut against the grain of the meat.
  8. Plate with carbs and vegetables of your choice.
